I'm a true oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of these yet? (? You'll find all of my oatmeal cookie recipes directly there!) They are a few of the most well-known recipes in my blog because they taste really sweet and comfy, exactly like conventional"indulgent" oatmeal cookie recipes, but they include no refined flour or sugar!
That means you're going to start with whole wheat bread (or fermented, if you prefer) and instantaneous oats (like those... or those for a gluten-free edition!) . Immediate oats are smaller and thinner than conventional rolled oats, and you are able to see them in canisters right next to those old-fashioned oats in the grocery store.
I probably sound like a broken record by now... But because I ? you and also need your cookies to turn out totally plump and soft, I am reminding you ... Quantify your flour and oats correctly, with this method or even a kitchen scale! (? That is the one I have and love. It only cost $20!) A lot of either side will make your cookies taste cakey or sterile, instead of chewy. This is especially true of the oats--that they behave like little sponges and soak up lots of moisture out of the cookie dough!

Watch those bananas? And all of those brown spots? If it comes to baking bananas, brown = amazing! I ? extra speckly bananas cause they've so much glowing, bold flavor--and also additional sweetness! That's the minimum amount of brown that I suggest. More is better!
The remaining part of the cookie dough's sweetness comes in a different organic ingredient... Pure maple syrup (like this!) . You want the type that comes straight from maple trees, which is generally offered in thin glass jars or squat, round plastic jugs. Skip the pancake syrup and sugar-free syrup!

The raisins add even more sweetness! The freshly bought, additional plump, perfectly tender ones are perfect... But for those who have older, slightly dried out carbohydrates (hmm... it sounds absurd to describe dried fruit as dried outside! ) , that is okay!
Only add them to some microwave-safe bowl, and put water on top till they're completely coated. Seal plastic wrap over the top, and then microwave the bowl on high for 1 second. Should you let the peppers sit mixing together the cookie dough, this small hint hydrates them they're incredibly juicy--and that makes a huge difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal cookies are soft, chewy, and full of banana flavor! The familiar cozy spices and plump raisins make these much more irresistible. They will keep for a minumum of one week if stored in an airtight container in the fridge --should they last long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 teaspoon baking powder
1/4 tsp salt
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the yogurt, pasta, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add the flour mixture, stirring just until incorporated.
Using a spoon and spatula, drop the cookie dough to 15 rounded scoops onto the prepared sheet, and apply to the desired depth and width by means Banana Breakfast Cookies - Spend With Pennies of a spatula. Bake at 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.

For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice bran, and 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like that one!) Will also work, if quantified like this.
In case your pancakes are mature, dryer, and not too plump or succulent... Add them to a microwave-safe bowland put water at the top till they're fully covered. Seal plastic wrap over the surface, and microwave the bowl on high for 1 minute. Should you allow the raisins sit mixing together the cookie dough, this small trick hydrates them they're really tender and juicy!
